On our way to Mexico and Belize we went through California to visit our Uncle on his ranch. While there we looked at the old food pantry that has not been used in more than 20 years. There was a lot of food in jars on the shelves that was canned more than 20 years ago. Trying to eat most of what was in the mason jars would be like trying to get food poisoning and some of it would have a high likelihood of containing botulism. One mason jar could easily contain enough toxin to kill a person. When doing home canning we want to use proper canning methods to avoid getting sick or causing sickness in others. Re-using ball mason jars is fine as long as they are in good condition. You just want to be careful of what jars you use. Using proper canning jars, a pressure canner for low acidity foods as well as meats and fish and good canning recipes should ensure that you never get sick from home canned foods. We are all for home canning and have canned out food for years. I just thought that this pantry was a good example.
